Clean and Sanitize Your Wine Making Equipment
Make sure that all of your wine making equipment is thoroughly washed and rinsed with the sanitizing solution.
Primary Fermentation Process
To start the primary fermentation process, you need to add a small amount of warm water in the bottom of the sanitized primary fermenter. Use a spoon and stir the water in one direction. As you stir the water, sprinkle Bentonite into the bucket. Keep the water moving while you are adding the Bentonite. Take the cap off the concentrated juice. Rinse the pouch out with some warm water to make sure all of the juice is out of the bag. Add water till you reach the 6 gallon mark of the primary fermenter. With a spoon, stir it well. Take specific gravity reading with the hydrometer and keep a record. Sprinkle the yeast on top of the juice. Cover your fermenter with the lid. Add water to the airlock and put on the lid. Keep the container in an area that is 65 to 75 degrees. You should notice considerable bubbling in the airlock in 24 hours to 48 hours.
Secondary Fermentation Process
You will need to transfer the wine into a clean carboy when the wine reaches the specific gravity you will find in the directions. This usually takes 7 to 10 days. Then seal the carboy with a bung and an airlock. Keep the carboy in a dark area with a temperature of about 65 to 75 degrees. You should leave it there for 2 to 3 weeks.
Stabilize and clear your wine
When the wine has stopped fermenting, transfer it to the cleaned and sanitized fermenter. Add packets of potassium metabisulphite and the potassium sorbate by stirring with a long spoon. Stir for 2 minutes. Add the fining agent and stir for 2 more minutes. Then when the ingredients have been added and the wine is degassed, rack your wine and transfer it into a clean carboy. Let it sit till the wine is clear or about 2 weeks.
Bottling the wine
Bottle the wine and put the cork on the bottle, seal the bottle and let the bottle stand upright for one week. Then store and age the wine.
